- 2 cups flour sifted
- 1 cup boiling water
- 4 tbsp melted butter and extra for brushing
- pinch of salt
Sift the flour and add melted butter.
Add salt and pour boiling water into the flour.
Use a spoon to mix into a wet, lumpy mixture.
Once slightly cooled down, knead into a soft dough. Initially it feels sticky but it will get smooth.
You may add a little more butter if the dough does not feel soft and continue to knead.
Form 8 balls. Flatten the on a powdered surface with the palm of your hand.
Roll into a circle of about 20cm in diameter.
Place the roti on a pan and cook until it starts to bubble somewhat.
Flip and cook until the other side starts to bubble.
Brush with butter flip over again. Brush the other side with butter.
Cook time approximately 1 minute per roti, flipping it over three times.
Put kitchen towel at the bottom of a container and pile roti's up. Cover when cooled to keep them soft.
