Classic Lamb Shank

- 4 lamb shanks
- 3 cloves garlic minced
- 2 tbsp butter
- salt and pepper to taste
- 2 tbsp olive oil extra-virgin
- 1 onion chopped
- 2 medium carrots peeled and chopped
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 410g can chopped tomatoes
- 2 sprigs rosemary
Preheat oven to 350°F.
Season shanks with salt and pepper.
Heat oil in a pot and fry shanks on all sides until golden.
Add butter to the pot with carrots and onions.
Add garlic and fry until onions are soft.
Add tomato paste and stir until vegetables are coated.
Pour in broth and canned tomatoes and return shanks to the pot.
Add rosemary and bring to a boil.
Transfer to oven and bake until tender for about 2 hours. Remove rosemary.
Place shanks on baking tray and grill at high heat for about 3 - 5 minutes until brown on top.
Place back into pot with gravy. Serve.
