- 250 g tapioca pearls
- 4 cups full-cream milk
- ½ tsp salt
- 70 g butter
- 120 g sugar
- 5 ml vanilla
- 4 large eggs
- 2 tbsp apricot jam
Pour cold water over tapioca to cover.
Soak for an hour.
Preheat oven to 160°C.
Drain tapioca in a colander and add to a saucepan.
Add milk and heat slowly.
Stir continually until tapioca turns glassy or transparent.
Add extra milk if the mixture becomes dry.
Mix in beaten eggs, salt, sugar and vanilla.
Bake for 1 hour.
