- 2½ cups flour
- ½ cup vegetable oil
- 1⅞ cup sugar
- 2 eggs
- ¼ tsp salt
- 1 cup milk
- 3 tsp baking powder
- 1 tsp vanilla
For strawberry frosting
- 6 cups icing sugar
- 250 grams butter softened at room temperature
- ½ cup strawberries washed, dried
- 24 paper cupcake cups
Mix together the sugar and eggs. Add oil.
Sift together dry ingredients.
Use a blender to work the flour into the oil mixture, alternating with milk.
Add vanilla.
Spoon into cupcake cups. Fill only ⅔ of the cup.
Bake in a preheated oven at 170°C/350°F for 15 minutes.
Cool down before decorating. Prepare strawberry frosting while cupcakes are cooling down.
Strawberry frosting
Mix together the butter with icing sugar using a large spoon.
Place strawberries in a blender and chop to a pulp.
Add to frosting and stir in. Spread over cooled cupcakes.
Refrigerate cupcakes because the frosting contains fresh strawberries.
