- 2 eggs
- 1 tsp butter
- 1 tbsp water
- 1 tbsp cheddar cheese grated
- salt and pepper to taste
- cocktail tomatoes to garnish
Mix the eggs with water using a blender or a fork.
Melt butter in a non-stick pan on the stove. Cover the bottom of the pan with butter.
When butter starts bubbling, slowly pour in egg mix.
Cook for approximately 2 minutes. Edges should be solid enough to insert spatula to slide underneath.
Flip in a quick movement.
Switch off heat. Sprinkle with salt and pepper.
Top one half of omelette with cheese.
Fold over the other half.
Dish up and garnish. Serve with bread or toast.
