  • 300 ml basic mayonnaise with 250 ml oil
  • 2 egg yolks hard-boiled
  • 1 egg yolk raw
  • 5 ml chives finely chopped
  • 5 ml parsley finely chopped
  • 5 ml capers finely chopped
  • 1 small pickled gherkin finely chopped

Instructions
 

  • Sieve hard-boiled egg yolks and make mayonnaise with hard-boiled egg yolks mixed with raw egg yolk.
  • Fold the remaining ingredients into the finished sauce.
