- 1½ cups flour
- 1½ tsp baking powder
- 2 eggs
- ¼ tsp salt
- 1 cup sugar
- 200 g butter melted
- ½ cup milk
- 1 tsp vanilla essence
- 12 - 20 paper cupcake cups
Vanilla icing
- 125 grams butter soft at room temperature
- 3 cup icing sugar
- 1 tsp vanilla
Preheat oven to 170°C/350°F.
Mix together butter and sugar.
Add eggs.
Sift together dry ingredients and work into the butter mixture.
Use a blender to mix dry ingredients into butter mixture, alternating with milk.
Add vanilla and spoon into cupcake paper cups, only ⅔ full.
Bake for 15 - 20 minutes.
Cool down completely before decorating.
Vanilla icing
Mix together the soft butter with icing sugar using a large spoon.
When lump free and smooth, add vanilla.
Spread over cupcakes and sprinkle with colourful sprinkles or a glazed cherry.
