6 medium potatoes 500 g minced meat 200 g mushrooms 1 can beans in tomato sauce 1 tsp crushed garlic 1 block beef stock 1 tsp mixed herbs 1 tsp mixed spices for meat 1 onion chopped 3 spring onions chopped 1 cup cheddar cheese grated 1 cup sour cream 15 ml vegetable oil
Cook potatoes until soft, then drain water and leave in pot
Preheat oven to 180 ℃ (350℉)
Fry onion, garlic and mushroom. Add mince
Fry until brown. Crumb beef stock over
Add beans and rest of ingredients, except sour cream, cheese and spring onions
Cut a deep cross in each potato
Place on a baking tray and divide the mince and beans over potatoes
Bake for 15 minutes
Top with sour cream and sprinkle over cheese and spring onions
