1 sponge cake 1 small can fruit cocktail 2 packets jelly, different fruit flavors and colors 300 ml boiling water ¼ cup sherry 500 ml prepared (or bought) custard 250 ml fresh whipping cream whipped stiff 1 mango, fresh, sliced 1 kiwi fruit, fresh, sliced 1½ cup mixed berries, fresh or frozen 1 slab plain milk chocolate grated
Layer pieces of sponge cake in a large transparent dish
Prepare 2 strong jelly mixes, using 150ml boiling water on each packet
Dissolve the jelly in two separate bowls and divide the canned fruit with its juice between the two bowls into the jelly
Add sherry to the bowls
Pour one jelly bowl over sponge cake
Add some mango and kiwi
Cover fully in custard and a thin layer of whipped cream
Repeat with another layer on sponge cake, jelly and fruit, fresh fruit
Add the rest of the custard, then rest of the cream
Top with the berry mix and sprinkle with grated chocolate
Chill overnight
