Notes

Tips for the Perfect Cremora Tart:
  • Freezing Cold Water is Crucial: The success of this tart hinges on using freezing cold water. This helps the Cremora powder and condensed milk emulsify and thicken properly when combined. If the water isn't cold enough, your tart might not set as firmly.
  • Gradual Lemon Juice: Add the lemon juice bit by bit, as indicated. You'll notice the mixture thickening quickly as the acid reacts with the other ingredients. Mix until it reaches a thick, spoonable consistency.
  • Mixing Thoroughly: Ensure all ingredients are thoroughly blended and smooth before pouring into the crust. Any unmixed bits of Cremora can result in a grainy texture.
  • Chilling Time: While an hour might get it firm enough, chilling the tart for at least 3-4 hours, or ideally overnight, will result in the best set and a truly firm, sliceable tart. This also allows the flavours to meld beautifully.
  • Crushing Biscuits for Topping: For a fine, even crumb topping, crush the Tennis biscuits in a resealable plastic bag using a rolling pin, or pulse them briefly in a food processor.
Serving Suggestions:
  • This Cremora Tart is a refreshing and delicious chilled dessert, perfect straight from the fridge.
  • An absolute favourite for Sunday lunch, family gatherings, or any summer celebration.
  • Serve it as a quick dessert when you're short on time but still want to impress with a sweet, nostalgic treat.
  • Garnish with a little extra grated lemon zest or fresh berries for a pop of colour and freshness.
Variations to Explore:
  • Biscuit Base: While Tennis biscuits are traditional, you could use digestive biscuits or even ginger biscuits for a different flavour profile in the base.
  • Citrus Zest: Add the zest of one lemon or lime to the filling mixture for an even more intense citrus tang.
  • Berry Topping: Instead of just biscuit crumbs, top the tart with fresh berries (like strawberries, blueberries, or raspberries) just before serving.
  • Chocolate Drizzle: A light drizzle of melted white or milk chocolate over the top before chilling can add an extra touch of indulgence.
