Ingredients
- ½ cup vegetable oil
- ⅓ cup barbeque sauce
- 3 tbsp Worcestershire sauce
- 2 tbsp garlic crushed
- 2 red chillies pips removed. chopped
- 2 tsp lemon juice
- 1 tbsp onion powder
- 2 tsp salt
- ⅛ tsp black pepper
- 1 tsp mustard powder
- 2 kg whole chicken butterflied
Instructions
- Mix all marinade ingredients together.
- Use ¾ of the marinade to coat the chicken, also under the skin.
- Cover in plastic wrap and leave overnight.
- Heat oven to 200°C.
- Bring to room temperature (about 20 minutes outside fridge).
- Heat 30ml oil in a pan and sear chicken on both flat ends.
- Spread rest of marinade evenly over rest of chicken.
- Bake in oven for 35 minutes,( turn after 20 minutes).
- Grill at 220°C for 5 minutes.
