Ingredients
- 2 red onions chopped
- 9 garlic cloves chopped
- 1 cup African bird's eye chillies without stems
- 2 red bell peppers chopped
- 3 ripe tomatoes skin removed, chopped
- 4 tbsp olive oil
- ⅓ cup red wine vinegar
- 2 tbsp brown sugar
- zest and juice of 3 lemons
- 1 tbsp salt
- 1 tsp coursely grated black pepper
- 1 tbsp paprika
- 1 tbsp oregano
- 2 bay leaves
Instructions
- Mix all ingredients together in a food processor and chop finely.
- Simmer for 20 minutes while stirring occasionally.
- Put in jars. Can be refrigerated for up to 2 weeks.
